GINGERBREAD MEN

Ingredients

GINGERBREAD MEN

  • 3 CUPS PLAIN FLOUR
  • 2 TSP BAKING POWDER
  • 3/4 TSP BAKING SODA
  • 1/4 TSP SALT
  • 1 TBSP GROUND GINGER
  • 2 TSP CINNAMON
  • 1/4 TSP NUTMEG
  • 6 TBSP DAIRY FREE MARGARINE
  • 3/4 CUP BROWN SUGAR
  • 1 FLAX EGG (1 TBSP FLAX SEED MEAL MIXED WITH 2.5 TBSP WATER)
  • 1/2 CUP BLACKSTRAP MOLASSES
  • 2 TSP VANILLA ESSENCE

ICING

  • 2 CUPS ICING SUGAR
  • 2-4 TBSP ALMOND MILK (ADD 1 TBSP AT A TIME UNTIL DESIRED THICKNESS)

Instructions

GINGERBREAD:

  1. IN A SMALL BOWL, WHISK TOGETHER THE PLAIN FLOUR, BAKING POWDER, BAKING SODA, SALT, GINGER, CINNAMON AND NUTMEG UNTIL WELL COMBINED.

  2. IN A LARGER BOWL, ADD THE MARGARINE, BROWN SUGAR AND FLAX EGG AND BEAT WITH AN ELECTRIC MIXER UNTIL SMOOTH.

  3. ADD THE MOLASSES AND VANILLA AND BEAT FOR 30 SECONDS TO MAKE SURE THE MIXTURE IS WELL BLENDED.

  4. GRADUALLY ADD SMALL AMOUNTS OF THE DRY INGREDIENTS TO THE LARGER BOWL AND STIR WITH A WOODEN SPOON TO COMBINE THE DOUGH, EVENTULLY YOU WILL NEED TO KNEED THE DOUGH TO COMBINE IT IN TO A BALL.


  5. SEPERATE THE DOUGH IN HALF AND WRAP IN CLING WRAP AND LET SIT IN THE REFRIGERATOR FOR 30-45 MINUTES.

  6. IN THE MEAN TIME, PREHEAT THE OVEN FOR 15 MINUTES AT 200 DEGREES CELSIUS.

  7. REMOVE THE DOUGH FROM THE REFRIGERTOR AND PLACE IT ON A LIGHTLY FLOURED SURFACE. FLOUR THE DOUGH AND ROLLING PIN AND ROLL THE DOUGH OUT TO 1/4 INCH THICKNESS. USE FLOUR TO AVOID STICKING TO THE SURFACE.


  8. CUT OUT COOKIES USING YOUR DESIRED CUTTER (THE GINGERBREAD MAN CUTTER OF COURSE) AND THEN PLACE THE CUT OUT COOKIES ON A BAKING TRAY LINED WITH PARCHMENT PAPER. SPACE THE COOKIES ABOUT 1 INCH APART FROM EACH OTHER.

  9. BAKE ONE TRAY AT A TIME FOR APPROXIMATELY 7-10 MINUTES, THE SHORTER TIME WILL GIVE YOU SOFTER COOKIES.

  10. REMOVE THE COOKIES FROM THE OVEN AND LET COOL COMPLETELY BEFORE ICING.

ICING:

  1. ADD 2 CUPS OF ICING SUGAR TO A BOWL AND ADD 1 TBSP OF ALMOND MILK AT TIME, WHISKING TO COMBINE THE TWO INGREDIENTS. STOP ADDING ALMOND MILK WHEN DESIRED THICKNESS IS REACHED. 

  2. PLACE ICING IN TO A SAUCE BOTTLE OR PIPING BAG TO MAKE DECORTING EASIER.
