Dark Chocolate Rice Crackles

 Makes 8-10 depending on the size.

Ingredients

  • 100 G 70% DARK CHOCOLATE CHOPPED
  • 1/2 CUP COCONUT OIL
  • 3 CUPS BROWN RICE PUFFS
  • 1/2 CUP ICING SUGAR
  • 1 TBSP COCOA POWDER
  • 1/2 CUP SHREEDED COCONUT
  • 1/4 CUP CARAMELISED BUCKINIS

Instructions

  1. LINE A 12 HOLE MUFFIN PAN WITH PAPER MUFFIN CASES.

  2. COMBINE THE COCONUT OIL AND CHOPPED DARK CHOCOLTE IN A HEAT PROOF BOWL OVER A SAUCEPAN OF SIMMERING HOT WATER. STIR UNTIL THE CHOCOLATE AND COCONUT OIL ARE COMPLETELY MELTED AND COMBINED.

  3. COMBINE THE REST OF THE DRY INGREDIENTS IN A BOWL AND THEN POUR OVER THE CHOCOLATE MIXTURE AND STIR UNTIL WELL COMBINED.

  4. DIVIDE THE MIXTURE EVENLY IN TO THE MUFFIN CASES AND SPRINKLE WITH TOPPINGS (YOU CAN USE VEGAN SPRINKLES, I USED VEGAN EDIBLE GOLD FLAKES) 

  5. REFRIGERTE FOR A MINIMUM OF THIRTY MINUTES OR UNTIL THE CRACKLES ARE FIRM.
