Festive Shortbread Cookies

Ingredients

  • 250 G VEGAN BUTTER/MARGARINE I USE A BRAND CALLED 'NUTTELEX BUTTERY'
  • 2 CUPS PLAIN FLOUR
  • 1 CUP CORN FLOUR
  • 1 CUP CASTER SUGAR
  • 1 TSP VANILLA EXTRACT
  • 3 TBSP WHITE SUGAR FOR DUSTING

Instructions

  1. PREHEAT OVEN TO 160 DEGREES CELSIUS AND LINE TWO BAKING TRAYS WITH PARCHMENT PAPER.

  2. USING AN ELECTRIC MIXER, BEAT THE BUTTER, CASTER SUGAR AND VANILLA UNTIL LIGHT AND CREAMY.

  3. ADD THE PLAIN FLOUR AND CORN FLOUR A SINGLE CUP AT A TIME AND COMBINE USING A WOODEN SPOON.

  4. MIX TOGETHER UNTIL A DOUGH FORMS AND THEN PLACE ON A LIGHTLY FLOURED SURFACE AND KNEAD THE DOUGH UNTIL SMOOTH. (THIS SHOULDN'T TAKE LONG)

  5. DIVIDE THE DOUGH IN TO TWO AND ROLL OUT THE DOUGH TO APPROXIMATELY 1/2 CM IN THICKNESS.

  6. USING FESTIVE COOKIE CUTTERS, CUT OUT YOUR COOKIE SHAPES AND PLACE THEM ON THE PARCHMENT PAPER. EACH HALF OF THE DOUGH SHOULD MAKE ENOUGH COOKIES FOR EACH BAKING TRAY.

  7. ONCE THE COOKIES ARE ON THE BAKING TRAY, USE A FORK TO PRICK THE DOUGH.

  8. USING THE WHITE SUGAR, LIGHTLY SPRINKLE THE TOPS OF THE COOKIES.

  9. PLACE BAKING TRAYS IN TO THE OVEN AND BAKE COOKIES FOR ~20 MINUTES OR UNTIL THE EDGES ARE GOLDEN. SWAP TRAYS FROM TOP TO BOTTOM HALF WAY THROUGH.

  10. REMOVE THE COOKIES ONCE GOLDEN AND LET COOL ON A COOLING RACK.
