LEMON & GARLIC SPAGHETTI

Ingredients

  • 250 G SPAGHETTI OPTIONAL: GLUTEN FREE SPAGHETTI

SAUCE

  • 4 TBSP OLIVE OIL
  • 1 TBSP MINCED GARLIC
  • 1 BROWN ONION DICED
  • 1/2 LEMON JUICED
  • 1/2 CUP PINE NUTS
  • 1 TSP HIMALAYAN PINK SALT
  • 1 TSP PEPPER
  • 1 TSP DRIED PARSLEY
  • 1/2 TSP CHILLI FLAKES OPTIONAL

Instructions

  1. COOK SPAGHETTI ACCORDING TO INSTRUCTIONS ON THE PACKAGING.

  2. WHILST THE SPAGHETTI IS COOKING PREPARE THE SAUCE.

  3. DICE THE BROWN ONION AND SET ASIDE.

  4. ADD THE PINE NUTS TO A BLENDER AND BLEND UNTIL THE NUTS ARE OF A CRUMBED CONSISTENCY.

  5. IN A SAUCEPAN OVER MEDIUM-HIGH HEAT ADD THE OLIVE OIL, GARLIC AND ONION AND SAUTÉ UNTIL THE ONION IS TRANSLUCENT.

  6. ADD THE SALT, PEPPER, PARSLEY & CHILLI (OPTIONAL) AND STIR UNTIL WELL MIXED.

  7. ADD THE JUICE OF 1/2 OF A LEMON AND LET COOK FOR 1 MINUTE

  8. ADD THE GROUND PINE NUTS AND SAUTÉ UNTIL THE NUTS ARE SLIGHTLY GOLDEN AND TOASTED.

  9. REMOVE THE SAUCE FROM HEAT UNTIL SPAGHETTI IS COOKED.

  10. ONCE THE PASTA IS COOKED, REMOVE FROM HEAT, STRAIN THE PASTA FROM THE WATER AND RETURN THE PASTA TO THE SAUCEPAN.

  11. COMBINE THE LEMON & GARLIC SAUCE WITH THE SPAGHETTI BY POURING THE SAUCE IN TO THE SPAGHETTI PAN AND TOSSING UNTIL THE SPAGHETTI IS WELL COATED.

  12. (OPTIONAL) ADD EXTRA GROUND PINE NUTS ON TOP AND SERVE WITH A WEDGE OF LEMON TO ADD EXTRA IF YOU PLEASE.

Recipe Notes

OPTIONAL:
- PREHEAT OVEN TO 200 DEGREES CELSIUS
- ADD SOME CHERRY TOMATOES TO A BAKING DISH AND COAT IN OLIVE OIL
- LET TOMATOES BAKE FOR 10 MINUTES UNTIL THEY HAVE BLISTERED.
- ADD TOMATOES TO THE SPAGHETTI WHEN READY TO SERVE.
