PUMPKIN PASTA BAKE

Ingredients

  • 1 500G PACKET PENNE PASTA
  • 1 KG BUTTERNUT PUMPKIN ROUGHLY CHOPPED IN TO ~2CM CUBES
  • 5 GARLIC CLOVES
  • 1/2 BROWN ONION ROUGHLY CHOPPED
  • OLIVE OIL DRIZZLE
  • PEPPER SPRINKLE
  • SALT SPRINKLE
  • 1 CUP VEGETABLE STOCK
  • 1/2 TSP SWEET PAPRIKA

CHEESE

  • 2 TBSP VEGAN BUTTER
  • 1 TBSP ARROWROOT FLOUR CAN SUBSTITUTE FOR CORNFLOUR
  • 1 1/2 CUPS SOY MILK
  • 1 TBSP NUTRITIONAL YEAST
  • 1 TSP SALT
  • 1/2 TSP GARLIC POWDER

TOPPING

  • 1/4 CUP REGULAR BREAD CRUMBS
  • 1/4 CUP PANKO BREAD CRUMBS
  • SPRINKLE SALT & PEPPER

Instructions

PUMPKIN MIXTURE:

  1. PREHEAT OVEN TO 200 DEGREES CELSIUS.

  2. PREPARE THE PUMPKIN BY DICING IT IN TO ~2CM CUBES, ROUGHLY CHOP HALF A BROWN ONION AND GATHER 5 GARLIC CLOVES. PLACE THE DICED PUMPKIN, ONION AND GARLIC ON A BAKING TRAY LINED WITH PARCHMENT PAPER. SPRINKLE WITH OLIVE OIL, PEPPER AND SALT.

  3. PLACE THE BAKING TRAY IN THE OVEN AND BAKE FOR 35-45 MINUTES OR UNTIL THE PUMPKIN IS SOFT AND COOKED.

  4. REMOVE THE TRAY FROM THE OVEN AND PLACE ALL OF THE INGREDIENTS EITHER IN A BOWL OR IN A FOOD PROCESSOR (REMOVE THE OUTER LAYER OF THE GARLIC). IF YOU HAVE A FOOD PROCESSOR THEN PLACE THE PUMPKIN, GARLIC AND ONION IN THE PROCESSOR AND BLEND UNTIL SMOOTH. ADD THE VEGETABLE STOCK SLOWLY.

    IF YOU DONT HAVE A FOOD PROCESSOR, PLACE THE PUMPKIN, ONION AND GARLIC IN A BOWL AND MASH WITH A POTATO MASHER UNTIL COMBINED. THEN USE EITHER AN ELECTRIC MIXER OR STICK BLENDER TO MAKE THE MIXTURE MORE SMOOTH WHILST SLOWLY ADDING THE VEGETABLE STOCK.

  5. ADD THE PAPRIKA AND ADD SALT AND PEPPER TO TASTE.

  6. ONCE THE PUMPKIN MIXTURE IS COMPLETE, BRING A POT OF WATER TO THE BOIL AND BEGIN TO COOK THE PENNE.

  7. WHILE THE PASTA IS COOKING, PREPARE THE CHEESE SAUCE.

CHEESE SAUCE:

  1. IN A SAUCEPAN OVER MEDIUM HEAT, ADD THE BUTTER AND STIR UNTIL MELTED.

  2. ONCE MELTED, ADD THE SALT, GARLIC POWDER AND ARROWROOT FLOUR AND WHISK UNTIL A PASTE.

  3. ADD THE SOY MILK AND NUTRITIONAL YEAST AND WHISK CONTINUOUSLY OVER A LOW-MEDIUM HEAT UNTIL THE SAUCE IS THICK AND STRINGY. REMOVE FROM HEAT. SET ASIDE.

PASTA BAKE ASSEMBLY:

  1. ONCE PASTA IS COOKED, DRAIN THE WATER FROM THE PASTA AND SET ASIDE.

  2. ADD HALF OF THE CHEESE SAUCE TO THE PUMPKIN MIXTURE AND WHISK UNTIL COMBINED. ADD THE PASTA TO THE SAUCE AND MIX UNTIL THE PASTA IS WELL COATED.

  3. ADD THE PASTA TO A BAKING DISH AND POUR THE REST OF THE CHEESE SAUCE OVER THE PASTA. COAT THE TOP OF THE PASTA BAKE WITH BOTH TYPES OF BREADCRUMBS AND ADD SALT AND PEPPER.

  4. (OPTIONAL) SPRAY THE BREAD CRUMBS WITH COOKING OIL TO MAKE THEM EXTRA CRISPY.

  5. PLACE THE PASTA BAKE IN THE OVEN FOR 10 MINUTES AT 200 DEGREES CELSIUS OR UNTIL THE BREADCRUMBS ARE GOLDEN BROWN.

  6. ONCE COOKED, REMOVE FROM OVEN AND SERVE IMMEDIATELY.
