3 INGREDIENT CHOCOLATE MOUSSE

Ingredients

  • 1 CUP CHICKPEA BRINE
  • 150G 70% DARK CHOCOLATE
  • 3 TBSP MAPLE SYRUP

Instructions

  1. DRAIN THE CHICKPEA BRINE FROM ROUGHLY 2 (400G) CANS OF CHICKPEAS. PUT IN A LARGE MIXING BOWL.

  2. USING AN ELECTRIC MIXER ON HIGH, MIX THE CHICKPEA BRINE UNTIL IT DEVELOPS A 'STIFF PEAK'. SET ASIDE.

  3. MELT 150G OF DARK CHOCOLATE. 

    (HEAT A SAUCEPAN OF BOILING WATER ON THE STOVE AND PLACE A GLASS BOWL ON TOP OF THE SAUCEPAN. ADD THE CHOCOLATE TO THE GLASS BOWL AND STIR UNTIL THE CHOCOLATE IS COMPLETELY MELTED.)

  4. REMOVE THE GLASS BOWL FROM THE SAUCEPAN AND LET REST FOR ~1 MINUTE. 

  5. POUR THE MELTED CHOCOLATE IN TO THE CHICKPEA BRINE FOAM AND  FOLD IT THROUGH UNTIL THE FOAM IS ONE CONSISTENT COLOUR.

  6. ADD THE MAPLE SYRUP AND FOLD THROUGH.

  7. ADD THE FOAM MIXTURE TO A BOWL OR RAMEKINS AND REFRIGERATE FOR A MINIMUM OF 3 HOURS.

  8. SERVE AND ENJOY.
