6 INGREDIENT BANANA MUFFINS

Ingredients

  • 2 BANANAS MASHED
  • 2 CUPS SELF RAISING FLOUR
  • 1 CUP COCONUT SUGAR
  • 1/4 CUP COCONUT OIL LIQUID
  • 1 TSP VANILLA ESSENCE
  • ~1 CUP SOY MILK

Instructions

  1. PREHEAT OVEN TO 200 DEGREES CELSIUS

  2. ADD THE FLOUR AND SUGAR IN A BOWL, MIX UNTIL COMBINED AND THERE ARE NO LUMPS.

  3. IN A SEPERATE BOWL, MASH THE BANANA AND ADD THE COCONUT OIL AND VANILLA ESSENCE.

  4. ADD THE DRY INGREDIENTS TO THE WET INGREDIENTS SLOWLY, STIR UNTIL WELL COMBINED

  5. ADD THE SOY MILK AND STIR UNTIL THE DESIRED CONSISTENCY IS REACHED (AS PICTURED)


    YOU SHOULD NEED SOMEWHERE BETWEEN 1/2 CUP AND 1 CUP OF SOY MILK.

  6. USE A MUFFIN PAN, LINED WITH MUFFIN PAPER TINS AND ADD ~1 TBSP OF THE MIXTURE TO EACH PAPER TIN. THE MIXTURE SHOULD MAKE BETWEEN 10-12 MUFFINS.

  7. BAKE FOR 15-20 MINUTES, OR UNTIL GOLDEN AND A SKEWER CAN BE PUT IN AND COME OUT CLEAN.

  8. LET COOL, SERVE AND ENJOY. 🙂
