APPLE & CINNAMON MINI LOAVES

Servings 6 Mini Loaves

Ingredients

WET:

  • 1/2 CUP COCONUT OIL MELTED
  • 1 TBSP RICE MALT SYRUP (CAN SUBSTITUTE FOR AGAVE, MAPLE SYRUP OR HONEY)
  • 1 TBSP APPLE SAUCE
  • 1 CUP SOY MILK

DRY

  • 1 1/2 CUPS PLAIN FLOUR
  • 3 TBSP BROWN SUGAR
  • 1 TSP BAKING POWDER
  • 1 TSP BICARB SODA
  • 1 PINCH SALT
  • 1/2 TSP NUTMEG
  • 1 TBSP CINNAMON

STEWED APPLES:

  • 2 TBSP COCONUT OIL
  • 2 CUPS PEELED & DICED PINK LADY APPLE (~ 2 LARGE APPLES)
  • 2 TBSP BROWN SUGAR
  • 1 TSP CINNAMON

CRUMBLE TOPPING:

  • 1/2 CUP COCONUT OIL MELTED
  • 1/2 CUP ROLLED OATS
  • 2 TBSP BROWN SUGAR
  • 1 TSP CINNAMON

Instructions

  1. PREHEAT OVEN TO 180 DEGREES CELSIUS.

APPLES:

  1. IN A SAUCEPAN, OVER MEDIUM HEAT- ADD ALL THE INGREDIENTS UNDER 'STEWED APPLES' AND HEAT UNTIL THE SUGAR HAS MELTED AND THE APPLES BECOME TENDER. (~3-4 MINS)

BREAD:

  1. COMBINE ALL OF THE DRY INGREDIENTS AND STIR TO THROUGHLY MIX THEM TOGETHER.

  2. COMBINE ALL OF THE WET INGREDIENTS IN A SEPERATE BOWL AND STIR TO THROUGHLY MIX THEM TOGETHER.

  3. COMBINE THE WET AND DRY INGREDIENTS BY ADDING THE DRY MIXTURE TO THE WET SLOWLY, MIXING CONTINUOUSLY WITH A WOODEN SPOON.

  4. ONCE THE MIXTURES ARE COMBINED, ADD THE APPLES AND STIR THEM THROUGH EVENLY.

CRUMBLE:

  1. MELT THE COCONUT OIL IN THE MICROWAVE OR IN A SAUCEPAN OVER LOW-MEDIUM HEAT, THEN COMBINE WITH THE BROWN SUGAR AND CINNAMON UNTIL MELTED. ADD THE OATS AND MIX THOROUGHLY. 

ASSEMBLY:

  1. ONCE ALL OF THE ELEMENTS ARE READY, PLACE THE BATTER IN TO A SILICONE MINI LOAF PAN (TRY TO FIND ONE THAT COOKS ~ SIX MINI LOAVES AT A TIME) YOU WILL ONLY NEED ~2 TBSP PER LOAF.

  2. ONCE THE BATTER IS DISTRIBUTED EVENLY, TOP THE BATTER WITH THE CRUMBLE MIXTURE (~1 TBSP OR LESS FOR EACH LOAF)

  3. COOK FOR 20-30 MINUTES OR UNTIL YOU CAN PLACE A SKEWER IN THE BREAD AND REMOVE IT WITHOUT HAVING ANY BATTER STUCK TO THE SKEWER.

  4. LET COOL, ENJOY.
