MUSHROOM SPAGHETTI BOLOGNESE

Ingredients

  • 200 G CHOPPED MUSHROOMS
  • 1 DICED BROWN ONION
  • 1 TBSP MINCED GARLIC
  • 1 TBSP CHOPPED BASIL
  • 1 TBSP CHOPPED OREGANO
  • 1 TBSP VEGAN WORCESTERSHIRE SAUCE
  • 1 CAN DICED TOMATOES
  • 1 TSP SALT
  • 1/8 TSP CHILLI POWDER OPTIONAL
  • 500 G ORGANIC SPAGHETTI
  • 1 HANDFUL FRESH BASIL LEAVES
  • VEGAN PARMESAN CHEESE OPTIONAL

Instructions

  1. PREPARE THE MUSHROOMS, ONION, BASIL AND OREGANO AND SET ASIDE.

  2. OVER A MEDIUM HEAT, ADD 1 TBSP OF OLIVE OIL TO A SAUCEPAN AND SAUTÉ THE ONIONS UNTIL TRANSLUCENT.

  3. ADD MUSHROOMS, GARLIC, BASIL AND OREGANO TO THE PAN WITH A DASH OF WATER, TURN THE HEAT TO LOW-MEDIUM, COVER THE SAUCEPAN AND LET THE MUSHROOMS SWEAT FOR 3-5 MINUTES.

  4. ADD THE WORCESTERSHIRE SAUCE, SALT AND DICED TOMATOES AND MIX TOGETHER UNTIL WELL COMBINED. (IF YOU'RE ADDING THE CHILLI POWDER THEN ADD THAT HERE TOO) COVER THE SAUCEPAN, REDUCE THE HEAT TO LOW AND REDUCE THE SAUCE FOR 30 MINUTES.

  5. IN A LARGE POT, BRING WATER TO THE BOIL AND FOLLOW THE INSTRUCTIONS ON THE SPAGHETTI PACKAGING TO COOK THE PASTA.

  6. ONCE THE SAUCE HAS REDUCED AND THE PASTA HAS COOKED, ADD THE FRESH BASIL LEAVES TO THE SAUCE AND THEN STRAIN THE PASTA AND SERVE IMMEDIATELY WITH THE SAUCE. I PREFER TO TOSS THE SAUCE THROUGH THE PASTA AND THEN SERVE, BUT YOU CAN CHOOSE TO SERVE THE SAUCE ON TOP OF THE PASTA IF YOU WISH.
