I must admit, this isn’t a recipe… just a lunch/dinner idea. I had this for dinner the other day and I figured ‘why not share this with my readers?!’
Baked potatoes are so easy to make, you literally just have to poke some holes in a potato, pop it in the oven at 200 degrees and wait 50-60 minutes.
The reason this recipe is so good is that it’s so versatile. You can put any kind of toppings on top, basically whatever you had the night before for dinner.
My favourite toppings for baked potatoes are leftover chilli con carne or leftover bolognese sauce.
On this particular day, I whipped up some Mexican spiced beans and some salad.
MEXICAN SPICED BEANS:
– 1 can of beans
– 1 packet of Mexican spice ( I use this)
– 1 tbsp Olive Oil
– 1 small brown onion
Add all of the ingredients above to a saucepan and cook until the beans are soft and the onions are translucent.
You can use anything you would like but on this particular day I used avocado, lettuce and nandos garlic sauce.
