VEGETABLE SOUP

This recipe is perfect for those winter days that you're stuck at work and can't be bothered cooking when you get home. This is a slow cooker recipe and is best cooked all day, put in the slow cooker before you go to work and enjoy as soon as you get back home.

Ingredients

vegetables

  • 1 brown onion diced
  • 2 sweet potatoes roughly chopped
  • 1 cup cauliflower florets
  • 2 carrots diced
  • 1/2 cup celery chopped
  • 1/2 cup mushrooms sliced
  • 1 can diced tomatoes 400g
  • 1 can 4 bean mix 125g
  • 1/2 cup soup mix legumes
  • 1 cup baby spinach chopped
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 clove garlic minced

herbs & spices

  • 2 bay leaves
  • 1 tsp rosemary
  • 1 tsp thyme
  • 2 tsp smoked paprika
  • 1 tsp basil
  • 1 tsp oregano
  • salt & pepper to taste

other

  • 4 cups vegetable stock

Instructions

  1. Prepare vegetables according to their above instructions (chopped/sliced/etc)

  2. Add all of the ingredients (except the baby spinach) to the slow cooker and cook on low for at least 5 hours.

  3. 5 minutes prior to eating, add the baby spinach and stir through.

  4. serve and enjoy.

Recipe Notes

The longer the soup is cooked for, the more the liquid will reduce. If you leave the soup on longer than 5 hours, you may wish to add more liquids. Just add more vegetable stock, taste the soup and if needed- add more salt, pepper, rosemary, basil, oregano and smoked paprika.
