CREAMY, CURRY VEGETABLE MORNAY

This recipe isn't the healthiest but it is delicious, hearty, family food. This recipe was originally made with butter, milk and also tuna. This recipe was made for me as a kid by my mother who learned how to make it from my great-grandmother. I loved this recipe growing up and when I became vegan, my mother and I tried every kind of plant based milk and a crazy combination of ingredients to try and veganise this recipe and we have finally done it. I hope you enjoy it as much as all of my family does.

Ingredients

  • 1 CUP BROCCOLI FLORRETS
  • 1 CARROT
  • 125 g SWEETCORN
  • 125 g PEAS
  • 1 BROWN ONION SMALL
  • 1.5 tbsp MARGARINE I USE NUTTELEX
  • 2 tbsp CURRY POWDER
  • 3 tsp CORNFLOUR
  • 1 CAN OF COCONUT CREAM
  • 1/8 tsp CAYENNE PEPPER GROUND
  • 1/2 tsp SALT
  • 1/4 tsp BLACK PEPPER CRACKED

Instructions

  1. CUT UP BROCCOLI IN TO FLORETS, SLICE CARROTS IN TO MEDALLIONS AND DICE THE ONION.

  2. BRING A POT OF WATER TO THE BOIL AND BOIL THE BROCCOLI AND CARROTS UNTIL ALMOST COOKED (BUT NOT QUITE READY), REMOVE VEGETABLES FROM THE WATER AND SET ASIDE.

  3. IN A SAUCEPAN OVER HIGH HEAT, ADD MARGARINE.

  4. ONCE THE MARGARINE HAS MELTED, ADD THE ONIONS AND FRY IN THE MARGARINE UNTIL TRANSLUCENT.

  5. ONCE ONIONS ARE TRANSLUCENT, ADD CURRY POWDER AND CONTINUE TO FRY UNTIL THE CURRY POWDER IS AROMATIC (~1 MINUTE)

  6. REMOVE THE ONIONS FROM HEAT AND SET ASIDE.

  7. ADD THE CORNFLOUR AND 6 TSP OF WATER TO A BOWL AND WHISK UNTIL WELL COMBINED. SET ASIDE.

  8. ADD THE COCONUT CREAM TO THE SAUCEPAN WITH THE ONIONS AND RETURN TO THE HEAT. (MEDIUM-HIGH)

  9. ONCE THE COCONUT CREAM REACHES NEAR BOILING POINT, ADD THE CORN FLOUR MIXTURE AND WHISK CONTINUOUSLY UNTIL THE SAUCE THICKENS.

  10. ADD PEPPER, SALT AND CAYENNE PEPPER.

  11. ADD THE PRE-COOKED BROCCOLI AND CARROT AND COOK FOR A FURTHER 2 MINUTES.

  12. AFTER 2 MINUTES, ADD THE PEAS AND CORN AND COOK FOR A FURTHER 1 MINUTE.

  13. REMOVE THE VEGETABLE MORNAY FROM THE STOVE AND SERVE (SEE BELOW FOR SERVING SUGGESTIONS)

Recipe Notes

  • SERVE INSIDE VOL-AU-VENTS AND TOP WITH VEGAN CHEESE OR BREADCRUMBS.
  • SERVE WITH A SIDE OF MASHED POTATOES.
  • SERVE MIXED IN WITH PASTA, TOP WITH BREADCRUMBS AND BAKE IN THE OVEN TO MAKE A PASTA BAKE.
