EXCLUSIVE: STRAWBERRY & COCONUT ‘CHEESECAKE’ BITES RECIPE

INGREDIENTS:

BASE:
1 CUP OF WALNUTS
6 DATES (PITTED)
½ CUP OF DESICCATED COCONUT
1 TBSP OF WATER

FILLING:
1 CUP OF COCONUT MILK
1 CUP OF CASHEWS (SOAKED FOR 1-2 HOURS)
1 ½ CUPS OF FROZEN STRAWBERRIES
2 TBSP OF RICE MALT SYRUP
2 TBSP OF COCONUT SUGAR

TOP STRAWBERRY SWIRL:
½ CUP OF FROZEN STRAWBERRIES
1 TBSP OF WATER

OPTIONAL:
TOP WITH MORE DESICCATED COCONUT

METHOD:

PREP:
1] CUT STRIPS OF PARCHMENT PAPER AND PLACE IN EACH SECTION OF A MUFFIN TRAY TO ENABLE EASY REMOVAL OF THE CHEESECAKES.

BASE:
2] PLACE ALL INGREDIENTS IN A BLENDER AND BLEND FOR APPROXIMATELY 1 MINUTE OR UNTIL IT REACHES A CONSISTENCY THAT WILL BE EASY TO COMBINE TO MAKE THE BASE OF THE CHEESECAKE BITES.

3] USING A SPOON, PLACE THE MIXTURE IN THE BOTTOM OF EACH SECTION OF A MUFFIN TRAY (ON TOP OF THE PARCHMENT STRIPS) AND FLATTEN TO PREPARE FOR THE FILLING TO BE PLACED ON TOP.

4] PLACE IN FREEZER WHILST WAITING FOR THE FILLING.

FILLING:
5] PLACE ALL INGREDIENTS IN A BLENDER AND BLEND FOR APPROXIMATELY 1 MINUTE OR UNTIL IT REACHES THE CONSISTENCY OF ICE CREAM.

6] USING A SPOON, PLACE THE FILLING ON TOP OF THE BASE IN THE MUFFIN PANS. SMOOTH OVER AT THE TOP AND ALLOW FOR THE PARCHMENT PAPER TO STILL BE ACCESSIBLE.

STRAWBERRY SWIRL:
7] PLACE STRAWBERRIES AND WATER IN A BLENDER AND BLEND UNTIL THE CONSISTENCY OF A SORBET. USING A TEASPOON, PLACE SMALL AMOUNTS OF THE MIXTURE ON TOP OF THE FILLING AND SWIRL AROUND USING A TOOTHPICK OR WOODEN SKEWER.

8] PLACE FINISHED CHEESECAKES IN TO THE FREEZER FOR 2 HOURS.
