SWEET POTATO TATER TOTS

INGREDIENTS:

SWEET POTATO MIXTURE:
1 medium sweet potato or 2 small sweet potatoes
1 tsp minced garlic
1 tsp paprika
1 tsp onion powder

COATING:
2 tbsp corn flour
1 cup of panko bread crumbs
2 tbsp of regular bread crumbs
1 tsp paprika
1 tsp onion powder
2 tsp nutritional yeast
pinch of salt and pepper
BINDING AGENT:
‘No Egg Egg Replacer’ – ORGRAN
½ cup cornflour
METHOD:
1) preheat oven to 180-200 degrees Celsius
2) stab the sweet potato(es) in numerous spots
3) bake sweet potatoes (depending on the size of the sweet potato(es)) until soft in the middle, (roughly 30 minutes)
4) remove sweet potato from oven and remove the skin.
5) mash the sweet potato (just enough to be broken up but not enough to be mashed to a purée)
6) add the garlic, paprika and onion powder and mix together
7) place in the refrigerator for 10 minutes to cool
8) combine the ingredients for the coating and prepare the egg replacer
9) using the sweet potato mixture make tater tot shapes and place them in to the ½ cup of corn flour and coat the shapes evenly
10) take the tater tots from the corn flour, to the egg replacer and coat in mixture and then place in coating mixture and coat throughly.
11) once all tater tots are coated, shallow fry in oil and fry until both sides are a golden colour. (~ 1-2 mins each side)
12) sprinkle some salt over the finished product and serve immediately!
